It’s Girl Scout Cookie Time

Meeshie just finished selling girl scout cookies.  Thank you to everyone that placed an order!  Girl Scout Cookie time is always interesting.  Everyone has their favorites, ours is the Somaos.  I have to ration them to my husband or he will eat the whole box in one sitting.  Not that there is that many in a box, but I need to make sure his sugar doesn’t get too high.

The cookies don’t come in for a few more weeks, and since we really love Somaos and Trefoils I made a batch of each.   

Trefoils are the shortbread cookies that are shaped like a clover.  I just rolled the dough into a log and cut them into disks.  They are actually better than the original.

Today it’s the trefoils and later I’ll share the Somaos.  I’m doing it in this order because the base of the Somaos is this cookie. 

Trefoils

  • 1 C Butter, softened
  • 1 C Sugar
  • 1 Egg
  • 1/2 t Vanilla
  • 1 t Kosher Salt
  • 3 C Flour

In a medium-sized bowl, cream together the butter and sugar.  Beat until light and fluffy.  Add the egg and beat until incorporated, scraping down the sides of the bowl.  Add the vanilla, continuing to scrape the sides.  Slowly add the flour and salt.  Mix until incorporated and dough is uniform.  Roll into a log with a diameter of about 2 1/2 inches.  Wrap in Saran and place in the fridge for at least 2 hours or the freezer for 25 minutes.  Slice dough into 1/8 inch disks and place on baking sheets about an inch apart.  Bak in a 350 degree oven for 10-15 minutes, until lightly golden brown and crisp.

Makes about 5 dozen cookies.
