Heavenly Peanut Butter Cookies

I want to share a secret with you.

Are you ready?

The secret to a perfect peanut butter cookie is …shortening.  Did you write that down?  Good. 

That’s right.  No butter in this cookie.   

The other secret is using chunky peanut butter.  But I’m not so sure that’s a secret as a preference.

This is the best peanut butter cookie I’ve ever had.  I would know, I love peanut butter cookies. 

This is a recipe that I’ve been making forever.  Sometimes I add chocolate chips but it’s really not necessary.

At Christmas time I use a cookie press instead of a fork.

Isn’t it festive?

If you squint, I think you can see the pattern of the press.

Peanut Butter Cookies

  • 1 C Shortening
  • 1 C Granulated Sugar
  • 1 C Brown Sugar
  • 2 Eggs
  • 1 t Vanilla Extract
  • 1 C (heaping) Chunky Peanut Butter
  • 2 C (a little less) Flour
  • 2 t Baking Soda
  • 1/2 t Salt

Cream the first five ingredients together.  Stir in the peanut butter.  Combine the remaining dry ingredients together and stir them into the peanut butter mixture.

Drop the rounded dough on an ungreased cookie sheet.  Press with a floured fork to form criss-crosses.  Preheat the oven to 350 degrees and bake for about 8 minutes.

Makes 2 1/2 dozen cookies.
