The Most Amazing Almond Cookies

I made these amazing almond cookies recently.  I mean they are so amazing.  I actually wish I had made more of them, that’s how good they are.

Almond Cookies

  • 1/2 C Butter, softened
  • 3/4 C Sugar
  • 1 Egg
  • 3/4 t Almond extract
  • 1/3 C Almonds, ground in a blender or food processor
  • 1 C Flour
  • 1 C Almonds, sliced
  • Milk chocolate, melted for garnish

Preheat the oven to 350 degrees.

In a medium bowl blend the butter and sugar until mixture forms a grainy paste.  Scrape the sides of the bowl, then add the egg and almond extract. Beat at medium speed until light and fluffy.

Add the ground almonds and flour and blend at a low speed until combined.  Do not overmix.  Form the dough into 1 inch balls and roll in the sliced almonds coating thoroughly.  The less you handle these, the lighter they will be.  Place the balls on an ungreased cookie sheet, 2 inches apart.  Bake for 15-18 minutes until cookie is slightly brown along the edges.  Immediately transfer cookie to a cooling rack.

Once the cookies are completely cooled, drizzle the melted chocolate on top.  Refrigerate the cookies to help the chocolate set.

Makes about 2 dozen cookies.
